Nutella Donut

INGREDIENTS

Whole eggs300g
Sugar200g

Magimix® Green 3g
Saf-instant® Blue15g
Milk Powder40g
FillingQuantity
Nutella 250g
Snow sugar QS

PREPARING THE DOUGH

  1. Mix all the ingredients, except butter, for 5 minutes at low speed.
  2. Add the butter a little at a time, every 1-2 minutes, until it is fully incorporated.
    This may take 8-10 minutes.
  3. Round and smoothen the dough. Ferment for 2 hours in the chiller.

SHAPING & FRYING

  1. Punch the dough and roll it out to a thickness of 1.5 mm. Leave to rest for 15 minutes.
  2. Use a dough cutter to cut the dough into pieces of the desired size, and place them on a tray.
  3. Proof at 30°C for about 45 minutes, or until the dough doubles in size.
  4. Fry at 180°C for about 1-2 minutes or until both sides are golden brown.
  5. Remove from pan and leave to cool.

 

Assembly:

  1. Pipe Nutella into the doughnuts.
  2. Sprinkle some icing sugar on top.
